Thanks to my blog, I sometimes make recipes that I wouldn’t probably have made if I didn’t have a blog. Usually, these are things that I don’t like eating so much, such as potato mash, chili con carne and low FODMAP potato salad.

The funny thing is that I often find out that I actually quite like the dish when I make it myself. And that happened too when I made this potato salad!

Here in the Netherlands, this classic potato salad is often served at BBQs and buffets. We call it hussar salad and it is usually made with potatoes, meat, eggs, pickles, and mayonnaise.

People often buy ready-made potato salads in the supermarket and when I was younger I absolute despised those salads. When we had a BBQ, I would always steer clear of these salads.

You also had snack-size potato salads that you could buy for on-the-go and in high school, this was a favorite snack for many kids. I

couldn’t understand how people could enjoy that greasy salad with chunks of undefined pieces of food. Those salads from the supermarket just didn’t look tasty at all.

My boyfriend is from Slovenia and there they have a similar recipe for potato salad, that they call French salad.

He made that for Christmas, with potatoes, carrots, pickles, and lots of mayonnaise.

I actually quite liked it and I thought, if I like this, I will probably like our classic hussar salad too if I make it from scratch!

I made a classic potato salad, how lots of people eat it here in the Netherlands, with potato, diced ham, egg, and pickles. Often peas are added to this salad too.

Because peas are not low FODMAP, I used canned green beans that I chopped up finely. To make the dressing not too greasy, I used some lactose-free yogurt next to the mayonnaise.

This low FODMAP potato salad is super simple to make and A LOT tastier than a store-bought potato salad, if you ask me.

A good reason to make this yourself (and I think it would be quite hard to find a store-bought potato salad that is low FODMAP). I am very curious about what you will think of this recipe!

Description

A recipe for a low FODMAP potato salad! With potato, ham, egg and pickles. Delicious for a BBQ, picknick or buffet ✓ Gluten-free ✓ Lactose-free

Ingredients

Scale

  • 400 g (14 oz) potatoes
  • 100 g (3.5 oz) diced ham
  • 100 g (3.5 oz) green beans, canned
  • 4 pickles (make sure no FODMAPs have been added)
  • 3 eggs
  • 2 tbsp mayonnaise
  • 2 tbsp lactose-free yoghurt
  • 1 tbsp mustard (make sure no FODMAPs have been added)

Instructions

  1. Peel the potato and cut them into small cubes. Bring a pan with water to a boil and boil the diced potatoes for 5 minutes with a pinch of salt. Drain and put aside to cool down.
  2. Boil the eggs hard in 8 minutes.
  3. Cut 3 pickles into small cubes. Cut 1 pickle into slices and save this for garnish.
  4. Drain the green beans and cut into small pieces.
  5. Mix for the dressing mayonnaise, yoghurt and mustard. Taste and season with salt and pepper.
  6. Cut one egg into slices and save this for garnish. Cut the other eggs into small pieces.
  7. Put the pieces of egg, potatoes, diced ham, green beans and pickles in a bowl. Add the dressing and stir well. Store the salad in the fridge until you serve it.
  8. Divide the salad over a large plate or platter when you are going to serve it. Garnish with the slices of egg and pickle.
