I’ve resisted really putting that latest social media medium into practice until this weekend, but when 11 food bloggers get together, it gets a little out of control and it gets captured – every huffy, hiking, picturesque, food gorging minute of it!

But I realized after this weekend, that two weekend away from home is too much for me. Granted I got to spend the majority of the weekend in my yoga pants, and a big gooshy sweater, in a log cabin, – being away from home for 8 days in the last 14 is too much for me. Do you ever get that feeling when you travel for a while? I think the magic number is 3 days away from home before that feeling kicks in.

Being home with Ben and Huck may seem monotonous every once in a while, our routine is very consistent and unwavering, but it’s home, and it’s where I’m the happiest. Who wouldn’t be home with their squishy, adorable beast to hug every day and their dog?! It is my happiest place on earth.

Quick and Easy Cherry Cream Cheese Danishes

I know you’ve all seen these danishes crop up on the blog from time to time – but with such a quick and easy treat to make making several renditions is also super fun! The puff pastry and cream cheese is a canvas for whatever toppings you want to add! And you can even make them savory! That sweet tooth of mine usually gets the better of me though – and my jeans. Self control goes out the window when danishes are around! But really, let me just put one of these in front of you and see if you can resist. It won’t work.

How to Make Easy Cream Cheese Danishes

Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silicone baking sheet.

On a lightly floured surface roll out thawed puff pastry into a 12×9″ rectangle. Cut in half lengthwise, yielding 2 4-½” strips. Cut those two strips crosswise into thirds, to yield six 4×4 ½” pieces.

With a knife, score ½” border around the edge of each piece of puff pastry. Use a fork to make five or six pricks into the dough within the border of each piece. This will help keep the middle of each piece from rising.

In a small bowl, stir together softened cream cheese, sugar, and vanilla. You can also add in a small dash of almond extract into the cream cheese mixture if you want. Lemon juice or lemon zest in the mixture is also delightful. If you prefer, you can also mix this together with an electric mixer.

Spoon about 2-3 tablespoons of the cream cheese mixture into the middle of each piece of dough and spread around evenly, ensuring the mix stays within the borders.

In the middle of the cream cheese, add about 6 cherries from the cherry pie filling into the middle.

Using a pastry brush, brush the egg wash around the edges of the puff pastry.

Bake for 20 minutes, on the middle rack and rotate the baking sheet half way through baking. The edges will be golden brown. Remove from sheet pans and cool on a wire rack. Serve warm or room temperature. Sprinkle with powdered sugar before serving. Shave chocolate over the top as well, if desired.

Can a Glaze be added to these danishes?

Sure! Mix together 1 cup of powdered sugar, with a tablespoon or two of milk, and a dash of salt and vanilla. Stir together to create an easy glaze on top of the cherry filling after baking.
