Especially if you bake bread from scratch, it not only tastes better, but is also healthier, because you know what’s in it! In addition to traditional bread varieties such as light wheat bread, mixed grain bread, rye bread or wholegrain bread, bread recipes without yeast are particularly popular because they are made quickly.

In this blog post, I’ll show you how to make a wholesome, healthy bread from scratch in no time without using yeast. It’s fluffy, soft, totally delicious and better than from the bakery! In addition, it is of course naturally vegan and can be made gluten-free too!

Homemade Bread without Yeast

You don’t necessarily need yeast to bake bread, so I didn’t use it in this easy recipe. This means that this bread does not need time to rest or rise, so you can prep the dough in only 5 minutes. To make it, all you need to do is mix all the ingredients together and then put it in a baking dish in the oven. It’s that easy!

Seed and Nut Bread

You can bake the bread classically without any seeds or add your favorite nuts and seeds like sunflower seeds, pumpkin seeds, flax seeds, chia seeds, sesame seeds, poppy seeds, almonds, hazelnuts, walnuts, etc. Just be creative!

Ingredients for the Recipe

  • flour: I like to use a mix of whole wheat flour and light flour. Both wheat flour, spelt flour and gluten-free flour are suitable. You can find more detailed information about the type of flour here.
  • baking powder
  • salt

  • apple cider vinegar
  • optional: seeds, nuts as well as bread seasoning for a better flavor. Here are some suggestions.

Step 1: Make the bread dough

First, combine the flour, baking powder and salt in a bowl. If you like, you can also mix in bread spices, seeds and nuts. Next, add water, oil and apple cider vinegar and and mix with a spatula or wooden spoon to form a sticky dough.

Step 2: Bake bread

Transfer the dough into a loaf pan and smooth it out. Sprinkle with nuts and seeds as desired and cut the bread lengthwise. Bake in the preheated oven at 200 °C for about 60 minutes. Then let cool, cut and enjoy!

Which flour is suitable for baking bread?

This bread recipe is very versatile and works with just about any type of flour. For the proportion of whole wheat flour, you can use either wheat, rye or spelt flour, or a mixture of all. The same applies to the proportion of light flour. You can also bake the bread with only light flour or only darker flour. The finer the flour, the fluffier the bread will be.

How to bake gluten-free bread without yeast!

To make the quick bread gluten-free, you can simply substitute a gluten-free flour mixture.

How to store and freeze quick bread

  • Storage: Wrapped in a kitchen towel, the bread will stay fresh and delicious for 2-3 days!

Ingredients

  • 1 ⅔ cup (200 g) whole grain flour whole wheat, spelt or gluten-free flour (*see notes here)
  • 1 ⅔ cup (200 g) light flour all-purpose, wheat, spelt or gluten-free flour (*see notes here)
  • 1 tbsp (16 g) baking powder
  • 1 tsp salt
  • 1 ⅓ cup (320 ml) water
  • 2 tbsp oil
  • 1 tbsp apple cider vinegar

Optional:

  • cup (50 g) seeds & nuts *see notes here
  • 1-2 tbsp bread spice optional

Instructions

  • Put a baking dish filled with water on the lowest level of your oven and preheat the oven to 392 °F (200 °C).

  • Line a 9 or 9.5-inch (23-25 cm) loaf pan with parchment paper.

  • Combine flour, baking powder and salt in a bowl. (Optionally, you can mix in bread spice, seeds and nuts).

  • Add water, oil and apple cider vinegar and mix with a spatula or wooden spoon to form a sticky dough (you don't have to knead it).

  • Transfer the dough into the baking pan and smooth it out (this is easier if you moisten the spatula with a little water). Sprinkle with grains and seeds as desired and cut the bread lengthwise.

  • Bake in the preheated oven on the middle rack for 60 minutes (if necessary, repeat the cut once after the first 10 minutes of baking).

  • Allow to cool completely. Then slice and enjoy with desired spreads (such as cashew cream cheese and chia jam) or serve as a side dish with a creamy soup or curry. Many delicious vegan bread topping are mentioned here!
